This is very famous Italian dessert literally means “pick me up”.it is made by layering a cream mixture (mascapone, egg yolks, sugar, and whipped cream, espresso)
Egg yolks. 4nos
Whipped cream. 300gr
Mascapone cheese 500gr
Sugar. 100gr
Espresso. 1shot
Vanilla. 5gr
Water. 42gr
* whipped egg yolks
* boiled sugar and water soft boll stage should be temperature 120©
* add sugar in egg yolks
* when your meringue is ready add espresso and whipped
*add mascarope cheese
* and mix very slowly whipped cream
*finally mixture is ready

Flour. 44g
Vanilla. 5gr
Method
* whipped egg and sugar make meringue
*add vanilla and flour

Flour 150gr
Coco Power 30gr
Vanila. 5gr
Method
Whipped egg and sugar
Mix flour and coco powder
Add flour and coco powder
Mix very slowly all ingredients

After the Sponge baking you can finish you cake
The cake is layered with fresh whipped cream, chopped dark, and chopped cherry.
The cake Is covered with whipped cream from all the sides and top.Dark chocolate flakes are put on top with swirls of whipped cream that are decorated with cherries .the side can be left plain or you can be decorated with chocolate.

*add water milk and egg
*dough time 6 min
Sheeting
We can 3 fold 2single 1duble fold.
Prove your crosients very properly
